| Lobster 
                        in Black Bean Sauce 
                        with Angel Hair Pasta
 Recipe from Lane’s 
                        Restaurant
 Serves 
                        10 Pasta 
                        Ingredients:500 gr. Angel Hair Pasta
 Procedure 
                        for 
                        the Pasta:Boil in salt water with a drop of oil for 2 - 3 minutes.
 Lobster 
                        Sauce Ingredients:3 Boston Lobsters (no shell)
 4 tbls. Fermented Black Beans
 2 tbls. Garlic (minced)
 2 tbls. Spring Onion
 1 tbls. Fresh Red Chili (julienne)
 2 cups Chicken Stock
 2 dashes Sesame Oil
 4 dashes Dark Soya Sauce
 1 tbls. Sugar
 Cornstarch
 4 dashes Chinese White Wine
 2 tbls. Oyster Sauce
 For 
                        the Lobster Sauce: Rinse the black beans. Boil sugar, chicken stock and dark 
                        soya sauce for the basic stock, add some cornstarch. Pre-blanch 
                        the lobster, remove the meat from the shells and marinate 
                        in salt and pepper.Deep fry medium and place on a dry 
                        towel to absorb any excess oil.
 Garnish 
                        Ingredients:200 gr Baby Spinach
 To 
                        Finish the Dish:Sauté the black beans, red chili and garlic. Add 
                        the lobster meat and glaze with the basic sauce. Flavour 
                        with white wine and a dash of sesame oil. Pour the black 
                        bean and lobster sauce over the pasta. Before serving 
                        add the spring onion and garnish with coriander.
